Coconut Rice

Coconut rice is a fragrant dish and another staple of Anglo-Indian homes. Very easy to make and delicious!

Ingredients

  1. 2 tblsp olive oil (or sunflower oil, or 25g butter/margarine)
  2. 2 cup basmati rice
  3. 3 cups coconut milk (topped up with boiling water to make 3 cups total) (1.5x liquid of the amount of basmati rice used)
  4. 0.5 tsp tumeric
  5. 3x cloves
  6. 3x cardamoms, split
  7. 2x piece of cinnamon

Instruction

  1. Heat the oil / butter in a pan
  2. Fry the spices (cloves, cardamoms, cinnamon) for a few minutes
  3. Stir in the rice and turmeric and coat well in the oil / butter
  4. Add the coconut milk and water and stir
  5. Cover and simmer on lowest heat for (approximately) 15 minutes (or until the rice is done)
  6. Remove the lid from the pot / pan and allow the rice to air for ten minutes
  7. Fluff with a fork before serving
